Slow Cooker Recipes For the Paleo Diet

As winter turns into spring, the temperatures heat up, and you may not want to be cooking all day long just for a delicious Paleo meal. This is where the slow cooker comes in. You can have it turned on all day while you do other things, plus it won’t heat up your kitchen even on the hottest spring day. Here are some slow cooker recipes to try in the spring for the Paleo diet.

Mediterranean Chicken

The first Paleo dish you can make in your slow cooker is Mediterranean chicken. This type of chicken uses some rich Italian and Mediterranean-inspired spices and herbs that are readily available in the spring and allow you to have a healthy and delicious meal at the same time. You should start with boneless and skinless chicken, either breasts or thighs. Add them to the slow cooker with seasonings like salt, pepper, garlic, and Italian seasoning. You can add herbs of your choosing, along with Kalamata olives, onions, lemon juice, and bell peppers. Within a few hours, the chicken is done and ready to put a meal together.

Pineapple Chicken

Another easy chicken recipe that you can make in the slow cooker is pineapple chicken. Pineapple is in season during the spring or summer and is often chosen during this time of year because of its fresh, sweet taste. Pineapple chicken goes great when paired with a side salad or your favorite veggies. For this chicken, it works better with bone-in chicken, such as chicken thighs. You should also preferably use chicken with the skin left on. Add to the slow cooker the chicken with some butter, crushed pineapple and pineapple chunks, raw honey, apple cider vinegar, soy sauce, brown sugar, chicken broth, pineapple juice, and other seasonings you enjoy. You can thicken up the sauce by adding a little cornstarch as well.

Pork Chops and Apples

Instead of making applesauce filled with sugar, you can use your slow cooker to make pork chops with some apples. This is a delicious meal, and believe it or not, many areas have apples in season during the spring. This extremely easy recipe just calls for pork chops, green apples, cinnamon, and honey. Add it all to the slow cooker and cook for about 6-8 hours on low or 4 hours on high. You will enjoy this meal alone or with a salad on the side.
