Make-Ahead Breakfast Ideas

Breakfast tends to be the meal of the day when you don’t eat because most paleo breakfasts aren’t quick to prepare. That is where meal prepping comes in. Spend one day a week planning ahead and you will have breakfast for the entire week. Here are some different paleo breakfasts you can make ahead of time and freeze.

Baked Egg Cups or ‘Fried’ Eggs

Eggs make an excellent breakfast, but you are not restricted to hard-boiled eggs just to have the eggs ready by the time you wake up. There are also a couple of other options. The first option is to make baked egg cups, sometimes called egg muffins. These involve pouring scrambled eggs into muffin tins, adding meat and veggies, then baking them until the eggs are cooked through. Another option is to just crack one egg into each muffin tin compartment, then bake them until cooked through. Either way, you can let them cool off, then freeze them in bags or containers.

Pumpkin Donut Holes

Just because you are on the paleo diet and can’t have many ingredients used in traditional donuts doesn’t mean you can’t have them! These donut holes use pumpkin and some other approved ingredients. They are festive for the holidays, yummy, and easy to grab on your way out the door in the morning. To make pumpkin donut holes, you will combine ingredients like pumpkin and pumpkin pie spice, sea salt, baking soda, almond flour, butter, maple syrup, and coconut sugar.

Banana Pancakes

There are quite a few ingredients for paleo pancakes that are easy to make in large batches, then save for the week. The pancakes can usually last for a few days in the refrigerator or longer in the freezer. Pancakes can be heated up and enjoyed with syrup, or you can roll them up and eat them on their own or with a sausage link inside. For paleo pancakes, you just can’t use the traditional flour used. Instead, you want to use banana, butter, and nuts like almonds.

Smoothies

Since you can have most fruits and vegetables, smoothies are another good option. You just need to stay away from yogurt and regular milk. However, you can still have as much coconut milk or almond milk as you want, which adds the creamy texture. Some ingredients that are good for smoothies to make ahead of time are cherries, kale, spinach, bananas, strawberries, blueberries, parsley, pears, and raspberries.
