Bringing salad to work is a great option, but you might be running low on regular containers. In this case, it can be easy and fun to use major jars. They let you layer the ingredients so everything stays fresh until it is time to enjoy your salad. Here are some mason jar salads for the paleo diet you can plan ahead of time.
Chicken, Apple, and Pecan Salad
This is a simple, yet delicious salad for your mason jar. It is really easy to prep beforehand and you can keep all ingredients together in the jar, without worrying that some of them are going to spoil others. It is similar to a chicken salad, but you aren’t using any mayo and the rest of the fruits and veggies are completely optional. You can keep it simple with just these three ingredients, or you can go for more of a traditional chicken salad recipe by adding some chopped celery and cranberries as well.
BLT Salad
While you might not be able to make a traditional bacon-lettuce-tomato sandwich with bread, you could always turn it into a healthy and paleo-friendly salad. Since you are using tomato, that should be placed at the bottom of the jar. You want all of the heavier and juicer ingredients to be at the bottom when meal prepping, since this keeps them from ruining lighter ingredients. Lettuce or other greens is lightest and should always be placed on top. This helps to keep it from wilting. Put the tomato on bottom, followed by a layer of cooked bacon pieces, and ending with your lettuce on top.
Taco Salad
A fun salad to put in a mason jar is a taco salad. The only thing you aren’t going to have for this salad are the tortilla chips, but you really don’t need them! Just add all the normal ingredients you would use in a taco salad, such as lettuce, tomato, black olives, ground beef or ground turkey, bell peppers, onions, and avocado. Since it is paleo, you should opt out of having cheese and sour cream, but the rest should be just fine.
Chicken Fajita Salad
This is a good option when you want fajitas but you can’t have the tortilla. Instead, fill up your jar first with your sliced cooked chicken, then with your grilled peppers and onions. You will then finish off by adding some lettuce instead of putting the chicken fajita ingredients inside of tortillas. It is healthy and very easy to make.
